With the perfect blend of crispy and tender, this tasty peanut covered fish dish will leave you wanting more!
Ingredients:

fish fillets |

| 2 |
lemon (juice) |

| 2 tsp |
powdered curry |
|
| 2 cups |
U. S. peanuts, coarsely chopped |

| |
salt and pepper |
|
| 1 cup |
panko or breadcrumbs |
|
| 1 cup |
flour |
|
| |
cooking oil |
|
Directions:
Place fish fillets in a bowl and soak with lemon juice; season with salt, pepper and curry; let stand for about 15 minutes.
In a bowl, toss chopped peanuts with breadcrumbs, mixing well.
After 15 minutes, sprinkle fillets with flour, soak them in whisked
eggs, and pat them over peanut mixture until firmly covered.
Heat plenty of oil (you can also use oil spray); fry fillets on both
sides until golden; place them on a baking sheet and bake until golden
brown.
