Served with chicken, fish, crostini or even pasta, this pesto is versatile and nutritious. Try Peanutty Pesto with raw peanuts for a fresh accent to many dishes, or toasted peanuts for a richer flavour.
Ingredients:

fresh basil |

cloves garlic |

| ½ cup |
grated parmesan cheese |
125 mL |
| ¼ cup |
peanut oil |
50 mL |

juice of 1 medium lemon |

Directions:
In a food processor, pulse peanuts 4-5 times. Add basil and garlic and pulse for 1 minute.
Add Parmesan, oil and lemon juice; process until combined. The finished pesto should contain visible chunks of peanuts. Serve immediately, or store pesto in an airtight container in the fridge until ready to serve.
