A perfect side dish to your peanut butter and jelly sandwich, this celery and apple Salad topped with peanuts is the perfect combination of salty and sweet.
Ingredients:

lemon juice |
| ½ tsp |
dijon mustard seeds |
| ¼ cup |
olive oil |

red apples, cut into julienne |
| 2 |
green apples, sliced thin |
| 4 |
stalks celery, sliced thin |
| ¼ cup |
chopped parsley |
| ¾ cup |
U.S. peanuts, coarsely chopped |
Directions:
In a bowl, mix the lemon juice with the mustard, add oil in a thin stream, beating to emulsify, add peanuts and toss well.
