This is a salad that eats like a meal! You’ll love the combination of peanuts and seafood with a splash of Asian flavours.
Ingredients:

cloves garlic, minced |

peanut oil |

tomatoes, in wedges |
| ⅓ cup |
chopped shallot |

chopped green chili |
| ¼ cup |
fish sauce (sold in Asian supermarkets) |
| ¼ cup |
lemon juice |

ginger |
| 2 cups |

| 500 g |
peeled shrimp |
| ½ cup |
salted and roasted U.S. peanuts, chopped |
Directions:
Stir-fry garlic in a thick skillet with oil, moving constantly to brown
evenly. When it turns a nice golden color remove from heat, discard half
the garlic and pour the other half and the oil in a bowl, allow to cool
and add tomatoes, shallot, chili, fish sauce and lemon juice.
On the other hand, heat water in a saucepan, add sliced ginger and when
the water boils add the shrimp, bring again to a boil and remove from
heat. Drain shrimp and rinse with cold water. Add the shrimp to the bowl
of tomatoes and add peanuts, stir well and serve immediately.
