This simple recipe makes an impressive dessert using store bought puff pastry. Burnett’s Peanut Puff Bites are a scrumptious ending to dinner or a sweet reward for late-night studying.
Ingredients:
Filling:

Puff Pastry:

store bought puff pastry, thawed |

Directions:
Filling:
Whisk together peanut butter, icing sugar, butter and vanilla until the mixture lightens in colour and texture.
In another bowl, beat cream until soft peaks form, then fold into peanut butter mixture.
Puff Pastry:
Preheat oven to 400°F (200°C).
Flour work surface and rolling pin. Roll out puff pastry until it is 1/4-inch (5 mm) thick. Using cookie cutter, cut out desired shapes and transfer to baking sheet. Brush pastry shapes with beaten egg and lightly dock them with tines of fork.
Bake for 18 to 20 minutes or until golden brown. Allow to cool.
Gently remove tops. Fill a piping bag with peanut butter mixture and pipe onto the pastry shapes. Place tops back on, dust with icing sugar and garnish with mint, if desired.
