This tasty bread can be enjoyed any time of day. It is the perfect breakfast with a warm cup of tea or a tasty afternoon delight.



Ingredients:

1 cup  brown sugar
½ cup  chunky peanut butter
½ cup  cooking oil
2 eggs
2 cups grated carrots
1 tsp vanilla
¼ tsp nutmeg
¼ tsp powdered cinnamon
¼ tsp ground ginger
1 tsp baking soda
1 tsp baking powder
1 ¾ cups flour  
½ cup milk  

Directions:

Preheat oven to 180 °C. Cover a rectangular pan with waxed paper.

Whisk sugar, peanut butter, oil and eggs until creamy, add carrots and vanilla.

In a bowl, combine spices, baking soda, nutmeg, baking powder, and flour.  Add flour mixture alternately with milk to the mixture, pour into pan. Bake for 1 hour or until an inserted toothpick comes out clean. Cool 10 minutes. Remove from pan and cool completely.
