This comforting spiced peanut bread is a perfect complement to your morning coffee, or your family dinner. Either way, it’s tasty and full of fibre.
Ingredients:

| 1 tsp |
baking powder |

| 1 tsp |
powdered cinnamon |
|
| 1 tsp |
nutmeg |
|
| ½ tsp |
powdered ginger |

| ½ tsp |
baking soda |

| ½ tsp |
salt |
|
| ½ cup |
creamy peanut butter |

| 3 |
eggs |
|
| ¾ cup |
cooking oil |
|
| 2 cups |
grated pumpkin |
|
| ½ cup |
U.S. Peanuts, peeled and chopped |

Directions:
Preheat oven to 180 °C.
In a bowl, mix first eight ingredients. In another bowl, mix peanut
butter with the eggs and oil, add the spice mixture until incorporated,
add the pumpkin and chopped peanuts; pour mixture into a pre-greased
and floured bread pan.
Bake for 1 hour and 15 minutes or until an
inserted toothpick comes out clean. Let cool before removing from pan. Garnish with chopped peanuts.
