This is a salad that eats like a meal! You’ll love the combination of peanuts and seafood with a splash of Asian flavours.
|2||cloves garlic, minced|
|¼ cup||peanut oil|
|3||tomatoes, in wedges|
|⅓ cup||chopped shallot|
|1||chopped green chili|
|¼ cup||fish sauce (sold in Asian supermarkets)|
|¼ cup||lemon juice|
|500 g||peeled shrimp|
|½ cup||salted and roasted U.S. peanuts, chopped|
Stir-fry garlic in a thick skillet with oil, moving constantly to brown evenly. When it turns a nice golden color remove from heat, discard half the garlic and pour the other half and the oil in a bowl, allow to cool and add tomatoes, shallot, chili, fish sauce and lemon juice.
On the other hand, heat water in a saucepan, add sliced ginger and when the water boils add the shrimp, bring again to a boil and remove from heat. Drain shrimp and rinse with cold water. Add the shrimp to the bowl of tomatoes and add peanuts, stir well and serve immediately.
