Celery-and-Apple-SaladServes: Makes 4 servings
Cooking Time: 20 minutes

 A perfect side dish to your peanut butter and jelly sandwich, this celery and apple Salad topped with peanuts is the perfect combination of salty and sweet.


Ingredients:

2 tbsp (30 mL) lemon juice

½ tsp (2 mL) dijon mustard seeds

¼ cup (60 mL) olive oil

2 red apples, julienned

2 green apples, julienned

4 celery stalks, julienned

¼ cup (60 mL) chopped parsley

¾ cup (175 mL) peanuts, coarsely chopped


Directions:

In a bowl, mix the lemon juice with the mustard, add oil in a thin stream, beating to emulsify, add peanuts and toss well.
