A perfect side dish to your peanut butter and jelly sandwich, this celery and apple Salad topped with peanuts is the perfect combination of salty and sweet.
|2 tbsp||lemon juice|
|½ tsp||dijon mustard seeds|
|¼ cup||olive oil|
|2||red apples, cut into julienne|
|2||green apples, sliced thin|
|4||stalks celery, sliced thin|
|¼ cup||chopped parsley|
|¾ cup||U.S. peanuts, coarsely chopped|
In a bowl, mix the lemon juice with the mustard, add oil in a thin stream, beating to emulsify, add peanuts and toss well.
