Who said nutritious food can’t be tasty? Not us! This yummy cabbage salad is topped with a delicious, protein-rich peanut dressing that will have your taste buds dancing.
|½||Mexican turnip (jícama)|
|4||greed onions, finely chopped|
|½ cup (125 mL)||roasted U.S. peanuts|
|1 tbsp (15 mL)||fresh ginger, grated|
|¼ cup (60 mL)||peanut butter|
|½ cup (125 mL)||rice vinegar|
|⅓ cup (75 mL)||soy sauce|
|¼ cup (60 mL)||olive oil|
|salt and pepper|
Place the dressing ingredients in a jar with a lid, shake vigorously until they are integrated; set aside.
Cut the cabbage in half and slice it as thin as possible.
Peel turnip and cut it in thin strips.
In a bowl, mix the cabbage, turnip, radishes and onions, sprinkle with peanuts and pour in the dressing. Serve immediately.
